Method
- Grind the Sichuan peppercorns in your pestle and mortar
- Prepare the tofu; either by using your tofu press or squeezing out the excess liquid using a clean tea towel.
- Heat oil on a medium flame. Once hot, add the garlic and ginger and stir fry for 2 minutes.
- Add the mushrooms and cook for 8 minutes, stirring occasionally, until they have a bit of colour. Whilst the mushrooms are cooking, prepare your 500ml of vegetable stock.
- Add the leeks and cook for 2 minutes, until they start to unravel into spirals.
- Transfer the cooked vegetables into a bowl.
- Put the sesame oil, fermented black beans, chilli bean sauce, dark soy sauce and Sichuan peppercorns into the same pan on a medium heat and fry for 2 minutes.
- Add the tofu and coat it in the rich and savoury sauce.
- Return the cooked vegetables into the pan, stirring to coat all ingredients in the delicious sauce.
- Pour the vegetable stock into the pan and wait for it to boil. Whilst you're waiting, prepare your corn flour mix.
- Once the mixture is boiling, slowly add in the cornflour slurry whilst stirring the pan.
- Once the mixture has thickened, remove from the heat and serve with your choice of rice.
